    Did 3 racks in my #2, store bought from someone else with preseasoned, guess it is worth a try to see how they turn out. Using the 5-5.5hr no peaking method with a pan of apple juice.  Also grilling up some of my stuffed wrapped Jalapenos

    Boudin on the smoker

    Friend of mine brought me back a couple of her favorite boudin from her trip to LA. Through in smoker on 225 for 1.5-2hrs. I can say that I have never really had anything like it. Too bad it has to come shipped from there, but darn good.

    What brands/models do you guys use? Thanks to PJ for reminding me I need to look into these, been kicking it around for quite a bit. I just want to make sure the unit is sturdy and lasts quite a bit. Plus cost of supplies would be a fact too I guess, though probably cheap online.

    Sunday Smoke with Tappecue

    Getting ready for a smoke tomorrow with the new Tappecue. Got a small butt and a loin cut in half in Tony's recommended brine. Placed meat in brine at 1:45pm today, will take out at 1am and put in fridge.

    First time brining a butt!
