Got another 3 racks in the #2 today for family visiting from IA. Hope they like them.
Beautiful day here in sunny AZ after last nights storms. Have a great day all!
Did 3 racks in my #2, store bought from someone else with preseasoned, guess it is worth a try to see how they turn out. Using the 5-5.5hr no peaking method with a pan of apple juice. Also grilling up some of my stuffed wrapped Jalapenos
Friend of mine brought me back a couple of her favorite boudin from her trip to LA.
Through in smoker on 225 for 1.5-2hrs. I can say that I have never really had anything like it. Too bad it has to come shipped from there, but darn good.
What brands/models do you guys use? Thanks to PJ for reminding me I need to look into these, been kicking it around for quite a bit. I just want to make sure the unit is sturdy and lasts quite a bit. Plus cost of supplies would be a fact too I guess, though probably cheap online.
Getting ready for a smoke tomorrow with the new Tappecue. Got a small butt and a loin cut in half in Tony's recommended brine.
Placed meat in brine at 1:45pm today, will take out at 1am and put in fridge.

Combines the 2 things that I really like: Bacon and smoked salmon. These look very easy to make.
Some of the "essentials". Updated my Maveric to the ET733.
I do like the scale for the size and weight it can handle. I think it is a bit light weight but should do fine for the things I will use it for.
The newer Maveric is supposed to have much higher distance, will see. I like that it...
Hello all! Surprised to see not that many recipes on here for Salmon or fish in general. So I figured I would share mine that I have been using for quite some time that the family loves.
Pretty basic dry brine that doesn't require a lot of prep work and much time to brine in the fridge. I...
