Can't wait for the Smoker to show up! Was looking at the #1 since I am new to smoking but my wife said go for the #2! ;D
 
Way to go Ed...nice wife!  I purchased a #2 a year ago and have enjoyed many good smokes...you will too!  Cheers
 
Got my #2 about a month ago, your going to be pleasantly surprised by how easy this thing is to use as well as a hero to your friends and family for all the great Q they get to eat!!! Happy smoking!!
 
it got delivered today!! Saturday will be the day for setup and smoke break-in! :) Thanks for the supper fast delivery. Cant wait to get it going.
 
Seasoning the smoker now! This thing is Awesome! Can't wait to get some ribs in there.

Good times, Ed!  If you're planning on smoking with it after seasoning (today), I'd recommend leaving the door open for awhile and letting it cool all the way down before putting the ribs in.  Results are always better when you start with a cool smoker and cold meat.

Tony, Thanks for the tip. I wish I could today but we have a St. Pats party tonight so nothing till sunday. The smell from the seasoning makes me want to bail on the party and just eat some ribs!  ;D
 
Everything is in. We had some famous Dave rub so we are trying that.
One chunk of apple wood, loaf pan with beer, 230 for 5.5hrs no peak. Should be done around 5:30pm!

Ribs turned out good for the first try. I think a smaller piece of wood next time and a little more sugar in the rub. The thinner sections of the ribs were great but the heavier meaty parts were a little more chew than I would like. None of the meat was totally fall of the bone. Not sure if I should try a 3,2,1 next time to help get the fall off the bone style.

Overall the family loved the ribs and I am super thrilled with the smoker!
 
Congrats on the first smoke!  Great learning experience, and it will get better.  As for 3-2-1 over no peek; I always get fall-off-the-bone without wrapping.  Sounds like you needed more time.  I like the toothpick test for doneness.  Poke a wooden toothpick in the thickest meat and check for tenderness and pull away from the bone.  If it doesn't pull away, give them another 20 min and check again.
 
Thanks guys! I will do the toothpick test and add extra time if needed. What do you recommend for TEMP on the box? I was around 230.
