Heat Controller Adjustment

The website states: You can adjust the temp settings up or down somewhat
on a Smokin-It smoker.

Ed I'm certainly no expert in this area, but it's my understanding that with the analog controller "online" you will be limited to 250 degrees. Can it be adjusted to a higher setting? I can't answer that. You'd have to tear one apart to see how it's built. Most everyone here that has an Auber, bypasses the analog controller, to allow us to go to higher temperatures. I never saw the caution about using the Auber as the only temp control. If it did fail in the manner you suggest, seems to me like it would just burn out an easily replaceable and relatively cheap heating element.

After looking at the controller and the adjustment instructions closely I find: The controller does NOT have an adjustment under the knob.

Ed, you are correct:  The knob adjustment only corrects the indicated temp.  If you set at 225, and consistently get, say, 220, you can adjust the indicator, not the high temp range of the rheostat.  It is limited by design.

Now, If you are using the Auber wall-mounted probe, I would recommend bypassing the onboard controller completely.  This is simple, and there is a sticky topic on this in the Auber section.  If you take the analog "limiter" out of the equation, install the wall-mount probe, and run an autotune (per the instructions), you will have the most accurate smoker on the planet!

I was confused this morning when I turned it on to set a couple of programs I found the At was flashing.
Either I failed to read or they failed to remind me to set At =0 once it finishes.

It seems to me that if your AT was still flashing, then it didn't finish the autotune. It's been my experience that the AT flashes all during the autotune, which can take 2 or 3 hours, then stops flashing when it's done. If you go in and check the parameters, AT will automatically be set to 0.

Ed, the wall mount with an autotune is crazy accurate.  You did the bypass, too?

Yes, I did the bypass while I had the back off.

Ed, some have done the bypass with a switch, so they can switch back to the analog controller.  I've done mine straight.  If the Auber goes haywire, the worst that could happen is you ruin some meat, and maybe a $20 element.  Don't really think there's a fire hazard (but I could be wrong).  I look at it like trusting my digitally-controlled oven not to fail, either.
