Hours/lb. for turkey breast

I had all my tried and trusted recipes on an old laptop which bricked on me and i can't get the old posts (Divot's posts) to open when I click on the links. Can you advise how much time to budget per pound on a turkey breast? Planning to smoke at 240* range but can adjust if you have a rule-of-thumb that works.

Dunno per pound, but I'd guess no more than 2-2.5 hours for a typical size. The spatchcock whole 20+ lb turkeys I've done at a similar temperature have taken around 4 hours, and a separated breast will cook much faster.

Though I'd suggest turning it up to at least 250F. If you have the skin on and don't want it to be rubbery I'd go even higher than that, to at least 300F. I'm doing my whole smoked turkey this year at 325F which is as high as my 3Dwifi will go.

I have done several turkey breasts in the 7-8lb range and generally take about 3 hours at 240. I would shoot for 4 hours, which will be more than enough time and use the extra time you don't need for resting the breast.

By way of update, I just smoked a 7.5lb turkey breast this morning at about 260F and it took almost exactly 3.5 hours to reach 162IT. I have it resting now for an hour or so before I slice it up.

How much wood would you use for a 4 pound breast?

I used about 5oz of Cherry wood in my smoke yesterday for a 7.5lb turkey breast and the smoke was perfect for me. So, I would suggest a minimum of 3oz, but I think a little more would work fine too.
