...have me concerned about holding a 5-6 hr smoke on my 5D. Living up here in north central PA, we've been experiencing particularly cold temps for a while now. Sub-zero mornings and not much warmer than single digits for daytime highs. I'm caught now with about 60lbs of venison Bologna that needs smoked and not sure what...if anything...I must do differently in these temps. My smoker is under roof but sits in outside ambient temperatures. Today's forecast has a high of 20⁰F today so I plan on going for it...unless anyone with experience suggests I should reconsider. Would prefer to use my SI rather than babysit one of offsets in these temps.
