Ok the verdict.
Not a picture guy!
Cooked ribs 5:20, 2:20, 2, 1 came out a bit dry.
I would recommend 2:2:1. Keep temperature a little above the 5 in 225.
I tried the evoo and mustard, my opinion no difference.
Jeff Phillips rub is outstanding!
Here is what I did :
Purchased baby back ribs from costco (membrane removed) 3 rib sections
Added evoo to two ribs and mustard to the third.
Added jeff's rub to one side let sit for 10 minutes and then added to other side.
Put ribs into smoker without pre-heating. 225 degrees (3.05 oz of hickory)
Took 10 minutes to see smoke, 1:20 to hit 225.
Kept in smoker for 2:20 hours (increased heat to 250 to minimize hear lose at two minutes before taking out).
Smoke lasted for about 3:30 minutes
Foiled one rib w apple juice and put two ribs in foil pan with apple juice and covered pan.
Smoked for two hours and took off the foil and cooked for another hour.
The ribs were tasty, added sweet baby rays sauce as a side.
served cole slaw, mac and cheese, and potato salad.
Walked around the neighbor to share the good tidings.
My daughter was happy! that means a job well done!
I would recommend to document your process.
