If you set it for time, say 12 hours, and 12 hours passed, it should have gone to keep warm. If there was a middle of the night electrical blip, not enough to cause resetting of clocks and such, that could be the culprit. You don't say that the outlet remained hot. Hard to tell. I would set it up as you did before with a dummy load (loaf pan and moist sand simulating meat load), temp probe for the 'meat' and run it again as you did before; same settings etc. Do this when you are home for the entire time so you can check on it.
