Names Luke, I'm originally from Chicago, Illinois but moved to the western suburbs a few years ago. My Model #2 is at home waiting for me at the moment. I can't wait to get it out of the box. This will be my first smoker. I have tried to use a kettle grill with varying degrees of success in the past and am excited to work with something that requires a little less attention. I've already gotten some great tips while reading the forum. I will be seasoning either today or tomorrow. I plan to smoke two, three pound salmon fillets (skin on) on Friday. Any tips? From your experience, will the smoker pick up the fish smell?
