Hello, I just joined. I've been using various types and kinds of smokers for a lot of years. At present I have a Camp Chef 18" Vault that uses propane and a gravity fed insulated Assassin 28. I've used the Assassin for the last 10+ years and really like it but it is too large for my present needs since retiring. I've been researching insulated electric smokers which brought me here. So for my question, can the smoker attached be reasonably cleaned without harming the stainless steel? It's for sale near by but I know that eventually the dirty condition would drive me crazy.

Get the smoker, you won't regret it.
You can clean back to shiny stainless steel and then rebuild that good patena. I wait until the buildup starts to flake, then I scrape with a stainless steel spatula/paint scraper.
You can take it back to bare stainless steel by using easy off oven cleaner. Try to keep the cleaner off of the heating element though and wipe down with generous amounts of vinegar to neutralize the oven cleaner.
When clean, cover the floor and roof of wood tray with tin foil. Put a hole in the foil for drainage where the hole on the floor is.
 
Thank you Dave for your reply. My Assassin smoker has build-up like this and more but I think nothing of it. The new Smokin-it's are so good looking and if I had one I know I would want to keep it that way. :)

Ha Ha I'm in the same boat. I just bought a used #2 that was full of grease and mold. But the good sam I am, I followed the FAQ instructions on the Smokin-IT site to use vinegar and water and to never remove the creosote. It was 2 afternoons of busting butt with a pack of scotchbrites to get the grease and crust off, and it still looks like the picture. Not that I should mind, I'm guessing it's the creosote that's left. But now I find out I could have just used easy off to start from scratch. That would have been so much easier. Can someone please put that on the main site FAQ?
