New Member saying hello

I rcv'd my 5D about 2 wks ago and have been able to season it and do a brisket cook since then. I'm a real newbie to the world of electric smokers and SI Pro Series equipment in particular so I'm still learning how to navigate the menu structure. But....so far so good.

old sarge I am still around just a creature of Habit, I love ribs and have smoked 37 different times Ribs wife wants me to do a Brisket, but I am afraid to try one.
 
Brisket is pretty simple. I use a dry rub after trimming excess fat. Set smoker to 225 and meat temp to 200 and start the smoke around midnight. I check on it when I get up. Takes a long time. 12 to 14 hours.
