I smoked some more steelhead this week, only this time I used alder instead of apple wood. Alder is traditional not only in our marketplace but with Native Americans for a very long time. I'm not sure they did anything to the fish except a long cool smoke for preservation. They also did a quick smoke next to a fire. I've had chinook that way and it's as good as it gets. All that said, my alder smoked version was much richer than apple smoked. The apple was delicate, mild and very good. It's a good choice for a mixed crowd including children.
