This is one of the "go to" sauces I use for almost any meat. It's pretty much my standard sauce for pork chops, baby backs, and other pork products and I think it works equally well on poultry (especially on the grill).
MEMPHIS-STYLE BBQ SAUCE
2 Cups Heinz Ketchup
1/4 Cup Heinz Chili Sauce
4 Tbsp demara sugar
4 Tbsp molasses
3 Tbsp French's Yellow Mustard
2 Tbsp onion powder
2 Tbsp worcestershire sauce
1 Tbsp garlic powder
1 Tbsp cracked black pepper
1 Tbsp liquid smoke (hickory flavored)
1 Tbsp lemon juice
1 Tbsp salted butter
2 Tsp chili powder
2 Tsp Lawry's Seasoning Salt
1 Tsp cayenne pepper
1 Tsp lemon zest
Mix all ingredients over low heat until solids are dissolved. Increase heat and bring to a slow simmer
Simmer until reduced to proper consistency. Add hot sauce to taste. Refrigerate for up to two weeks.
