Greetings Nevada newbie here

Hello everyone recently purchased a 2D with a few accessories. Seasoned up yesterday. Gonna try some ribs today. Long time fire cooker with more grills, kamados, flap tops, pizza ovens, mangals, and salamanders than I can count. Very excited to give this smoker a go!

Really appreciate this forum. So much great info! Have printed the lazy q guide and will follow that for today’s ribs.

I have had excellent results using the 3-2-1 method with spare ribs. Although I usually kick the temp up to about 250 deg.
and usually its closer to 2-1/2- 2-1
