Couple questions on new Smokin It 3D

Just got a smokin it model 3D for Father’s Day to replace model 2 from 2012.


I have a couple of questions

1. Can I run the probe 2 and 3 cables through the vent hole on the top of the smoker, or is it better/safer to put them in through the main door?

2. Can I use wood chips instead of chunks in the smoke basket without the chip screen insert? Maybe just with some foil or something to hold them? If so, any adjustments I should make to the process? I have some chips on hand from old smokers that I’d like to use up, but may switch to chunks so I don’t know if I want to buy the insert for the new smoker yet.

3. I’m a bit confused about how to handle pre heating. Smokin It instructions say not to pre heat. But in other bbq forums, people say to preheat your smoker and only add meat once it’s up to temp and you’ve gotten past the gray “dirty” smoke. If I put the meat in right when I turn it on, won’t that dirty smoke impact flavor?

4. is there a seafood rack for the 3D? I see on the website they have one for the 2, 4, and 5. I liked the one I had for the 2 but would like a bigger one. I mostly use it for salmon filets.

Run the cables thru the smoke hole. No issues. You can try to use chips without a screen and judge whether or not you like the results. I have never used chips. I have never preheated my smoker and always get good results. That heavy smoke, when it happens, only lasts a few minutes and I have not noticed a negative impact on the food. Make sure you use good quality wood. You might ask Steve about the seafood rack for the 3.
