Just dropping in to introduce myself as a new owner of what I hope is the best smoker in the world. It arrived today, setup was a breeze and it is bathing in it's inaugural smoke as I type. I am located in the Dallas metroplex area.

Welcome from SE Arizona. Unlike the MES, you only need to use a little bit of wood, just a couple of ounces at the beginning; no adding any more during the smoke. Some folks (myself included) weigh the wood on a digital scale for smoke consistency and to avoid over smoking.
