Just finished seasoning my new #2. I've been smoking for about 10 years on
A very basic unit, no rheostat, no insulation, wrapping and unwrapping insulation to control temperature, throwing in wood chips here and there. My son suggested I step it up a bit, and did I ever. It's a beauty. I have my smokiLicious wood, am waiting for my thermoworks Smoke unit. I ocean fish summers and do a lot of cod, haddock, cusk and mackeral. I'm looking forward to doing ribs or a Boston butt soon, and then more racks of fish this summer. Thanks for all the great advice on this forum. It's a fun and tasty hobby. Don't your friends and family love it
