Got to cook for 20 - recommendations requested!

To all the Smokit-It gurus out there...  I've been extremely happy with my #3 and Auber PID for the past year or so.  But today, I found out I have a huge challenge and need to cook for a group of 20 next week Friday. I'd like to mix 2-3 meats in one smoke.  Shoulder, ribs, brisket, chicken...

    Weatherproofing the Auber

Anyone tried this?  The insides of this thing are pretty simple and should transfer easily to another case with proper planning.  Just wondering if anyone knows of a weatherproof case that might fit the bill. If not, I have another idea up my sleeve that I'm dying to try out...  Stay tuned! ...

    1st attempt at ribs

Interesting smoke today... Brother took the bullet, charcoal and chips to smoke some baby backs.  I took the #3, some hickory along with beer/mango juice for my racks.  Thought I could use the Auber probe to manage meat temp, but I either hit a bone or didn't seat it properly.  Smoker showed...

Second smoke - is this an issue?

Started my second smoke this AM.  Another shoulder, this time bone in.  Similar brine and rub - this one is to impress my brother who's visiting from Barbados.  He's an old-school smoker, built his own out of a 55gal food oil drum, using nothing but charcoal/wood and dry smokes everything.  He's...

    Hold times

OK...  First smoke underway and I'm so pleased I got the Auber!  Looking forward to a fine pork shoulder sometime around 4pm today. Question - is there a setting that will hold temps indefinitely?  Not that I plan on doing that regularly, but there are times I will be on a day trip to a client...

    T-minus 4 hours

Got my #3 on Tuesday.  All of the goodies were neatly tucked inside and I put her all together, and gave her a break in smoke.  Nice layer of hickory tar all over the insides - love that smell! On Thursday, I started tearing into the #3.  The permanent probe for the Auber arrived and I wanted...

Looking at adding AMNS to #3 - what size?

While I'm patiently waiting for my #3 to arrive, I've been reading about the A-Maze-N smoker add in for the #3 so I can burn pellets, chips or dust.  What size works best? If you're using one, please post a pic if you can. Thanks in advance. Rick

So stoked, soon to be smoked!

Just ordered a #3 after talking with Steve today.  If the stars align and the smoking gods are kind, I could have it sitting on my doorstep by Friday! It will be a pleasant surprise for when my brother arrives in early August.  That man smokes most everything, and since he lives in Barbados he...

Hello from not so sunny Wisconsin!

Hello everyone, My name is Rick, and I've been interested in smoking meat ever since my brother turned me on to it a few years back.  I've been using an old bullet smoker, but am looking at either a #2 or #3.  I'm a bit of a geek as well, so building a PID is likely a project I'll be...
