I have a hard time getting a thermometer into chicken wings during the cooking process. This time I just set the model 1 at 250 for 1 hour and 45 minutes with my favorite rub and hickory. Served sauce at the table. After cooking I checked it with an instant read just to make sure. I'm sure the time and temp will vary a bit but I'll get the feel of it and relax.
