Sugar Free rubs?

There's some out there, Mike, but you'll sacrifice your bark.  No sugar and BBQ are almost like matter/anti-matter!
 
Here you go, give this a try. If you like a bit more heat, increase the chipotle powder.
* Note you can also use chili powder.

Yields about 3/4 cup.

You’ll Need:
4 tbsp kosher salt
4 tbsp paprika
2 tbsp black pepper
2 tbsp garlic powder
2 tsp onion powder, toasted preferred
1 tsp ground celery seed
1 tsp dried oregano
1 tsp chipotle powder

That is pretty close to what I've been using for years.

Sugar ='s Bark never occurred to me. May have to rethink this.. wife may just have to pick around the bark.

I know you said she could not deal with sugar, is that the same for honey or molasses or agave nectar.... ?

That's what mine does!  She doesn't really care for the bark, but it's my favorite part!! 

By the way, here's a pretty good explanation of caramelization and the Maillard reaction, from amazingribs.com.  I don't care much for Meathead's condescending professorial attitude sometimes, but a lot of his "science behind the Q" explanations are really good.
