*Revised recipe, tastes great less work.
This is a new twist on the normal way I would bake fries. The beer brine helps to tenderize the potatoes and them them an nice crunch on the outside, while leaving the inside fluffy. For this recipe I used Dos Equis Amber Lager Beer.
Ingredients
• 1-2 large potatoes
• 2 T olive oil
• 1 T corn starch
• Salt & Pepper & Parmesan cheese
• 1 12 oz. beer
• ½ - 1 cup water
1 T salt
Directions
Preheat oven to 425 degrees using the convection setting. Line a pan (1” high) with foil and then place a cooling rack on it.
Scrub potatoes and cut into ½” thick fries. Place fries in large bowl of water, let sit for 10-15 minutes, rinse and then soak again. Drain and then add potatoes, beer, salt and water (add enough water to cover potatoes, a zip lock bag also works well here). Place the potatoes in the refrigerator for 4-6 hours.
Remove potatoes, drain and then pat dry. Add potatoes to zip lock bag that has the olive oil and cornstarch, mix well. Next remove potatoes from bag and sprinkle on both sides with a light dusting of salt/pepper and Parmesan cheese. Place in oven a cook until the potatoes are golden brown about 20- 25 minutes.
