    hang summer sausage or lay on racks?

    Doing my first batch of summer sausage in my new 3d tomorrow.  I can stuff into casings either 10 or 20 inches long. I know I can't hang the20 inch ones, but I think I can hang the 10 inch ones - but it would be nice to use the larger longer casings . I have never done them in my old smoker on...
