    1st prime rib

    1st rib roast is a success! model #1 Dry brined 24hrs w kosher salt, then applied herbed compound butter, 200deg for 3-1/2hrs (5oz cherry wood) then reverse sear on grill  ❤️  Even better is was on sale $4.99/lb!!  Thanks to Jeremy on the wood advise 🙂

    Smokinlicious chunk size

    Hi newbie here!  Just got my 1/4 box mix (alder, maple, cherry) in.  The double fillet is 1-1/2 x 3-1/2”.  Should I cut these in half?  Wasn’t sure if there too large for my Model #1

    Probe read 165 but undercooked - help!

    So I had my 1st smoke!  Everything went great. Took brined chicken out of fridge at 6am, into smoker by 720am.  By 1030 the Probe in breast read 165.  Took out and rested for 20mins.  Went to remove leg and it was all pink!! Just tossed into oven to finish cooking.  Should probe go elsewhere?
