    #2 temp probe

    I've had my #2 for almost a year now and aside from cleaning the bottom and wood box, nothing else. Question is does the build up on the temp probe cause any difference in operation? Can it act as an insulator? asking cause the probe is really hard to get to.

    Rib prep..

    Just a quick question, do you normally put ribs in the smoker from the fridge or do you let them sit out for awhile to warm up after applying rub?

    Mojo bricks results..

    Separated a 12lb brisket yesterday, injected with apple juice, woosti. put it in my #2 at 7am, temp cranked up to max., put in approx 8oz competition  mojo bricks, took it off at 12pm, 203deg IT, those mojos did the job, the wood smoke lasted for 3hrs +,wrapped and left till 3pm, cubed the point...

    Mojo bricks?

    Anyone use the mojobricks in their #2? I find that the wood chunks burn up too quick, consensus is these bricks last a lot longer, any info appreciated.

    Still cooking

    Did my first cook with the newly installed 800w element, did an eight lb butt overnite, worked as expected, no problems, took 11hrs at 225 to reach IT of 205, let it sit wrapped in a cooler for 5hrs, great pulled pork. The ol' #2 aint let me down yet!!

    New element

    Just received my new 800 watt element for the #2, no instructions included, any tips or is it self evident for installing, my biggest problem is vision in tight places.
