I put in 4 racks of ribs for a fireworks party tonight.  The top rack are frozen from Meijer and the bottom rack are fresh from the butcher.

I was at Meijer yesterday and they had dirt cheap pork butts.  I wish I had more room in the freezer.  I picked up one and plan to smoke it over night tonight.  Should be a solid couple of days of dinners and lunches.  I like to make enchiladas with left over pulled pork.
