    Ribs, Cheddar Brats and Boudin

Ribs were perfect.  My family eats enough BBQ to know when my Ribs are average and when they are amazing.  It was unanimous that these were up there with my best. The brats tasted like smoked brats.  They were good. First time I every had or cooked Boudin. It was really really tasty!  I liked it.

    Cheeseburger with a twist

So I have two 16 year old boys...  twins.  They can pack the food way.  We went out for burgers at a local burger bar and grill.  One of the boys ordered a cheeseburger called "The GLUTTONY".  Two burger patties that have to be close to 1/2 lb each, stacked with bacon and cheese. Topped with 2...

Boneless Skinless turkey breasts in a bacon weave

One of the things I enjoy is going the the meat market on a whim to look for something to bbq, picking something up and trying something new. Came home today with two medium sized skinless, boneless Turkey breasts.  Came home, gave them a light sprinkle, wrapped them in a bacon weave, and...

    Hollman's Sauce

Anybody ever heard of it or tried it?  It's amazing! http://www.hollmans.com/ The website states they are in Des Moines, but other articles I have found say it's made in Minden Nebraska.  Distribution is pretty limited and very regional (Nebraska and Iowa mainly).  Hollmans Barbeque Sauce is...

Auber ? - How to change settings

I have a solid understanding of how to set/change the cooking program. How do I change the alarm settings?  I know it's Code 0001 (for controlling temperature and alarm settings).  How do I enter that or get there? My problem is that sometimes I want to bump this thing to 300 degrees but when...

Tony posted his plans.  I figured I'd post mine, although I'm open to suggestions. Christmas Eve, heavy appetizers with the family.  I'm cooking stuffed Jalapeno's. 20 fresh Jalapeno's halved and seeded.  Boiled for 2 minutes. Cooled on ice. Stuffed with Cream Cheese/Chedder mix.  A little...

    RickNE's Auber Review

So some of you know that I was having some issues getting to an appropriate cooking temp in my #3.  So I bypassed the controller and plugged the unit into an Auber PID.  I had no time to do any type of test run so I dove right in and cooked two 8 lb pork shoulders for a small office Christmas...

Butt Question - Bone in vs No bone

I'm cooking two butts.  I've always cooked bone in.  These have been deboned. What should I expect for cook times?  Same as bone in? I did tie them up with butchers twine for cooking.

    heating issues

Something isn't right.  My maverick or my thermostat are not working correctly.  I think its the thermostat.  I can't get this thing above 210. Its cold out but not that cold.  And this should push thru 18 lbs if cold meat easily. The question is do I call and get the thermostat replaced or...

First Turkey... for family - HELP

I've smoked one turkey in my life, years ago, on my stick burner.  It ruined it. So we've never really hosted Thanksgiving and I don't know if my wife has every cooked a turkey either.  But my mom passed away earlier this year and well...  we are hosting.  So, my wife asks, "can you cook a...

    I love my Maverick

Last night, at 6:15pm, I put a 7.75 lb pork butt in the #3.  Hooked up my Maverick.  Left for the hockey game at 6:30.  Came home, grabbed my Maverick remote, went to bed.  Woke up at 9:45 this morning.  I had a rough Friday night and needed some catchup sleep.  Thankfully, I can sleep now while...

First cook - STL Style Ribs on the Model 3

I couldn't stand it.  I put ribs on.  It was a total impulse decision. I seasoned the smoker a 2nd time this morning.  Turned it off and let it cool while I went to the store and bought STL Style ribs and some other things I needed.  Came home, mixed up a batch of UWFSAE's Sweet Heat Pork Rub...
