    multiple butt question

    Not sure if this has been answered before.  I'm smoking 4 butts tonight on my #3 but I just have one thermometer  (733) with dual probes.  Should I monitor the upper or lower butts?

    Rib Rack orientation #3

    Since the #3 is deep enough for full racks of ribs, why is the rib rack shelf for the #3 oriented sideways which means you would have to cut the ribs anyway.  Wouldn't it be better to have the full length slabs of ribs running front to back?  I would gladly test one out for coming up with this...

Looks like it would be perfect for jerky, fish, nuts etc... on top of a regular grate.  it's 13.5 x 18 so not quite full size...
