    7 hours for these - set just under 250, temp was running 235-270. Very tasty, very tender, but all the fat didn't render so will shoot for a longer cook at 215-250 if that 35 degree swing holds. Temped at 203 when I removed them. First run with this smoker though.

    Greetings from Boston!

    Howdy all from just north of Boston! Just put the casters on today of my new Model #2. Gave it a seasoning/test run tonight, and I've got me a couple racks of gorgeous plate ribs that I'll be seasoning up and they'll go in around 6AM. Dinner will be sometime between 3 and 8 :LOL:
