Darn.  Was planning on finally testing out the jerky dryer.  Wouldn't be as big of an issue but I don't have a soldering gun. Red wire is not attached.

Had this workbench not getting much use so figured itd look great with a #2 on top of it. Got it at Sams clubs a few years ago. Bolts i got were a little long so ill grab some shorter ones tomorrow. 

Sort of thinking out loud to myself but before I had the SI 2 I would leave the Door to my coal smoker open a tad for a draft to help dry the fish out at the begining of the smoke to get a nice Pellical (Unsure of spelling lol) on the fish. Does anyone else open the door early on to get a draft...

Unboxed the new #2 yesterday and got it all seasoned up.  We have prior dinner plans tonight but i couldnt just let the smoker sit in the garage so i threw in a pregame snack for myself at 130pm. Going to try the no peak method.  I normally do the 3-2-1 or 2-2-1 method on my coal smoker.  Anyone...

Wife just ordered me the #2 for Fathers day! ( Shes a keeper) Been a charcoal guy for a while but was looking for an easier set it and forget it. All my research lead me this way. Looking forward for the arrival of the new smoker.
