    Monday test-brisket flat

Greetings, I am going to try our first brisket flat on Monday. We have done a butt, ribs, a chicken & thick chops. Despite being a absolute smoker newbie, the only thing not very tasty was the chicken skin. It might have had a good taste, but I refused to swallow a large chunk of it (RUBBERY)...

    box temperature

Greetings, I just got a Maverick 733. Put it through the top hole and started it up with wood in box. The temp went up to 315. Is this normal, anything to worry about? First chicken

Greetings, I did my first full chicken today. Looked super out of the smoker. The meat was excellent. I think I can use the skin to recap my tires. I wondered what you all meant by rubbery skin, now I know. The meat was tasty, moist and cooked to near perfection.

Now I have a larger slab of ribs. Does it make any difference what rack I put each on? Top, bottom...

Greetings! First smoke done, belly full.

Hi, I ordered a 2 and received it a couple days later. Being a 16 year ebay seller I really appreciated the packaging and quick shipping. Seasoned it a day ago and did a 9 pound butt today. Took 12 hours. The old saying "a watch pot never boils" can be applied to a smoker as well. Took it out...
