    To rotate or not

    I'm planning on doing 8 racks of spares in the #2 on the 4th, found some smaller ones at wal mart for around 10 bucks they are around 15 inches long so no trimming or cutting in half needed. My question is do I need to rotate with that big a load...bottom to top after a couple hours or just go 5...

    I love my #2 so much I'm thinking about ordering a #1 just for doing fish mainly salmon ( Itend to get lazy on cleanup )  the #1 would be perfect for this, I could order a fixed probe and have an awesome fish/ salmon smoker....what do ya think??

    Just watched a video om a product called the Briner, definitely ordering one. I do lots of chickens and this will be awesome, never seem to have just the right container, tried everything, the wife never seemed to enjoy the 5 gallon bucket, another good excuse to fire up the ole #2!!!

    28 day ribeyes first day

    Well I finally pulled the trigger on a ribeye 16lbs. @ 8.50 lb. 140 bucks got her bagged and in the fridge its been all of 30 minutes and I already want to look gunna be along 28 days. Will post with pictures a long the way.

    WOW!!!!! Am I impressed I only saw temp swings of 3-4 degrees that with the stock unit no mods or auber controller.     3 racks spares and apan of beans in the #2. Its blizzard conditions today so a good day to sit home and watch the smoker. Hope to get some pictures up soon. I always wrap my ribs but today I am going 5 hours 225 like a lot of have done will post when they come out.
