Hi all. I've got a Model 2 from 2016. What's currently happening, is that when I set the temp, twice with one 3-4oz chunk of wood in the smoke box, and once without the smokebox at all, it's going way over the temp setting.
First time, it was set to roughly 165 degrees. When I checked on it...
Hi all. First timer here. I picked up a flat cut brisket from a grocery today, 6.5 lbs. Has some fat on one side and is mostly uniform in size, but goes from about 1" to 1.5" from left to right. I'm guessing I should put the probe into the thickest part and aim for the 195 degrees that seems...
