My Smoke-it model #3 is in shipment and I'm reading about how little wood you want to add to these things. So the way I understand it, you should not fill the wood canister up. How much wood would you want if you were making snack sticks or jerky?

I have the 3.5 ordered. I know it comes with trays. Is it better to smoke stuff like snack sticks on the trays or hang them? I do not believe this smoker comes with anything to hang meat with. Would I just use wooden dowels or aluminum conduit to drape my snack sticks over?
