    What's cooking for Memorial Day?

    I decided to keep it simple and smoke some ribs today. Smoking at 230 for 4 1/2 hours then finish with a light glaze of sauce in the oven. Hopefully, they turn out great. I will try to post a photo if time allows. Enjoy your Memorial Day!

    Always a favorite

    Did a twice smoked ham for sandwiches and breakfast for our annual family mountain trip. Smoked it to for 4 hours to an IT of 140. Rubbed with a mix of mustard and maple syrup the some black pepper. Decided not to do a glaze this time. The flavor is outstanding.

    Removing Rib Membrane

    Brisket on sale

    Our Kroger had whole briskets for $1.99lb this week. I bought one for the freezer. While it was not the best looking brisket around, I couldn't pass it up. Just thought that I would share. I will not cook it for company only family and close friends, just in case it does not turn out well.

    Smoked cabbage

    Baked oysters

    While I love smoking, one of my favorite meals is baked/broiled oysters. It was a great Saturday with a trip to the farmers market and then the seafood market. The oysters were wonderful. Sometimes we need to think out side of the box/SI smoker.

    4th of July Smoking

    When I was at our local Kroger this week, the had french cut bone in pork loin for $1.99lb and butts were also at $1.99lb. Just thought I would share for anyone that has Kroger in their area. I smoke one loin and it was great. I added the other meat to the freezer.

    I am thinking of making some Tasso to freeze for use in some Cajun cooking. Has anyone attempted it in an SI? It appears pretty straight forward, similar to Canadian bacon but using a spicy rub and a pork butt.

    Food for football

    I am thinking of cooking some ribs for Sunday's  game (Falcons - Green Bay). We really like GB and their fans but needless to say hoping for a Falcons win. The best way to enjoy a weekend is smoking meat and watching football with friends and family.
