I am too lazy to search and read through all the PID info
I assume when using the PID, you simply turn the temp knob on the smoker all the way to wide open and let the PID do the work?
Is that correct?
Just received my #3 today, want to start with something simply, ribs.
Question, when do you use a water pan, what meats, what kind of pan and put it where?
