When i do ribs on my Model 1 I do a dry rib overnight then I use Apple wood 3 or 4 oz with water at 225 for 3 hrs. Then I wrap them in foil adding a mix of melted butter and honey. Let them cook another hour, sometimes even a bit longer.

Just thought I would let you know I did my 13th rib smoke, since I got my #1  2 years ago and wife and I just love this little guy. and 5 smokes of Jerky. 

I smoked up a batch of ribs yesterday as it was warmer above freezing and I think my wood is to dry as Ribs did not burn but close to it I read some where not to soak wood in water so how should I add moisture to my apple wood?  Ribs were good  they were not wasted just surprised that  the wood...

For the last 2 weeks it has been cold here in western Canada warms up to -5 F then a strong wind at night down to -12 to 15 F .  Life is not fun  with out smoker smoke :'( :'(

I received my new replacement Jerky Dryer. it works perfect now just have to make a batch of Jerky. :) I am really happy with the service form Steve.
