Smoking 10 lbs of pork but and 10 lbs of brisket.  Should I smoke them as 4 / 5 lbs chunks or leave them as 10 lbs pieces (would prefer).  How long do you think it would take.  Hearing about an 1.5 per pound Fat cap up or down on the pork?  I don't want to wrap either pieces.  Thanks!
