    Pre smoked ham

    Cleaning out our freezer we found a frozen 8.5 lb hard wood smoked spiral ham.  I was wanting to smoke it in the #2.  How long do I need to smoke it.  I have hickory, Mesquite, and apple what would be the best to use.  It should be ready to smoke in the morning.,

    1st try at beef back ribs

    What did I do wrong

    I have smoked ribs, chicken, lamb and everything came out great. Today I smoked a 9 lb brisket.  The fat was trimmed almost off.  I put on a rub I have used and let it sit in the frig overnight.  I smoked it at 225 for 3 hours and put foil around and back in the smoker for 4 more hours and...

    Second smoke on the si #2

    Just unpacked Model 2

    I cleaned it out and put in the Hickory wood to cure the smoker.  It is built very well and should last a long time.  Can't wait until tomorrow to smoke some baby back ribs.  Way to go Smokin it for a quality product

    how to smoke a rack of Lamb

    I went by the meat dept. and they had a 53 dollar rack of lamp marked down to 21 dollars.  I have never smoked lamb before can I use my regular pork rub and cook about the same time.  Thanks for any help.

    Howdy from East Texas

    I just ordered a model 2.  I have used electric smokers for years.  When my daughter came and got my old one it was time for a new one.  Hope it works as good as every ones reviews.
