I may not have been clear but the access cover above was riding over the edge of convection flange about 1/8”. Flipped it over and screw holes lined up and cover was sitting flat against back of smoker. You may want to check that.

It looks as if the access cover above convection fan flange was on upside down on mine, allowing the moisture and smoke to shoot under it and into/around the ambient probe. The insulation in there was soaking wet, and my smoker is under a roof and a cover. Luckily it appears the silicone around...

I’m having similar issues as of today. 5th smoke. 3rd batch of sausage. Noticed ambient probe was reading about 10°low after about 3 hours run time, 2 hours with meat in. Kept getting lower and lower, sausage temp kept rising and output on heating element was at 100%. Luckily was able to set up...

Forgot to mention, I had them made out of stainless. He had some drops that he sheared to length/width and then bent them in brake. 16 gauge IIRC.

I went to a local sheet metal shop here and had 4 made. Cost $60. I was going to order but needed asap and knew I wouldn’t get on time this time of year with weather delays.
