I have been playing around with smaller chunks of belly to make some snack bacon. I like to fry up a couple of slices to have with a beer as an appetizer before dinner. This time I made a Pastrami and a Char Siu inspired bacon.
I will be adding three drawers under the smoker. A small one for the racks and two others for foil, paper and other tools. I have a small inline vent fan in the ceiling that is on a variable speed and I can add the last bit of pipe coming down when smoking. I will get rid of the cardboard box...
Had a little slab of belly and wanted to try something different. Black peppercorns, Fennel seed, Thyme, Garlic, Maple syrup, Bourbon, Brown sugar. Smoked with Hickory wood. I fried up the scraps to have a taste and love it!

last minute panic here. I have been reading on bacon and I am about to smoke a full belly after a nice week long dry cure. My plan is 2 hrs at 145° then upt to 200° to 150 IT. I have not heard anything about the water pan. I presume i would use a water pan right?
The other week I made some ham. I cured a pork loin for 8 days, then hot smoked it until I had a IT of 150°. On my next go I want to try cold smoking it rolling it in corn meal before freezing it uncooked (would be more like we get in Canada). I have been doing some reading and I am not sure...
