    Newb in trouble with 12lb butts

    My girl picked me up this 12 pound butt from costco. I have been cleaning the fat off for the past hour at leaSt with all my dull knifes. Turned out its 2 peices & I dont know what to do at this point. I don't have rope to tie them together. What do you suggest? Any help would be appreciated.

    Help a newb please with an autotune

    Just did the autotune on my 3 & my values are: P-64 I-781 D-195 Ran a program afterwards with the same bricks in there set for 225 & it over shot about 7 degrees before finally settling at 225. Is this normal or did I screw something up on the AT? Any help would be appreciated.

    Testing wall mount probe before install & off a few degrees

    I just tested my wall mount probe in boiling water & she will not exceed 209F. Is there an offset in the Auber where I can add the 3 degrees like on a meter? Im about to go check the meat probe now. Any advise would be appreciated. Thanks

    Newb seasoning smoker questions

    Divot makers post says 3 sample wood pieces & directions that came with the smoker says 2 peices. Did something change or does it even matter? 2 or 3 guys? Also says to cover top of the wood box & bottom of the smoker with aluminum foil. Divot makers instructions say to use no foil in bold...
