    Brining the Brisket.

    Ok. So, I am doing a brisket in the #1 this weekend. It's about 12.5 lbs pure trim. Going to have to slice into 2 pieces to fit in the #1. Here is the question. How long is the brine time for this? I am estimating the larger portion of meat will be 5.5ish pounds.  Would it be around 12 hours...
