Me and my father order a couple SI smokers last weekend.  I ordered a SI 3 and he ordered a SI 2. They came in today (Friday).  I finished his cart and bolted it to top.  I think he is quite happy I talked him into upgrading from masterbuilt smokers.  I know I am.  Here is a couple pics of...

??? Just had a thought hit me.  The masterbuilt 30 smoker has a 800 watt element.  Seems to me the controller would operate the 1 and 2.  I'm not a electrician but it might work at least until Steve comes out with his.

My luck is holding true.  Finally decided to buy a number 3 and they haven't had any in stock since.  I've planned 3 smokes as soon as I get it.  Putting off making 50 lbs of deer sausage, smoked potato casserole, and pulled pork.  I Also have a co-worker that wants to see it in action then...

I am planning on ordering a number 3 smoker as soon as they get more in.  Is the PID needed to better control temp spikes or is the standard control good enough.    Along with the usual butts and loins I plan on smoking a fair amount of sausage.  And later on jerky.
