Heating element problems? Check your temp knob!

I haven an older model 1 that I bought used.  After multiple longer than anticipated cooks and struggles to get my model 1 over 200 degrees, I thought I was looking at having to replace the element or get a new smoker.  I gave the unit one last look, dial seemed tight, unit would click on at...

Brisket Planning for a Camping Trip

Hey folks - I've got a group/family (10 adults/10 kids) camping trip coming up and I'm responsible for one of the dinners.  My hopeful plan is to do some burnt ends in advance, refrigerate, then heat at the site.  Assuming that's not a dumb idea, I could use some help on serving size. I don't...

    Which should I smoke?

I have pre-seasoned spare ribs from Costco and unseasoned back ribs, where I'll use simply salt & lime.  Since I only have a #1, I'll only be able to smoke one of them.  Regardless of choice, I plan to finish them on the grill, so the million dollar question is which one is better served with...

    Costco pre-seasoned garlic pepper drumsticks

A little over 2oz of almond (2 racks worth of chicken in the #1) at 225 for about 1.5 hours. Pulled at 145 degrees and finished on Weber over mesquite charcoal until just shy of 170 deg.  Definitely doing this again. (Smoked the corn too, not sure I'll do that unless I finish as a casserole...

    Smoked Scallops

Decided to smoke some scallops in my #1 on a whim. -Very small amount of almond wood (maybe 1oz) - tossed the scallops with juice from 1/2 lemon and a little salt and pepper. - set #1 to 250 - one temp hit 175 (nice smoke puffing), I opened up and put in the scallops - cooked 15 minutes and...

    Next Tri-Tip attempt

This time around only 2oz of almond wood.  Targeting 125. Then reverse sear after a short rest. Worst case if I dont succeed, I'll be at a beerfest this afternoon.  :o

    Tri-tip to temp before S1 hit 200?

Curious, two prime tri-tips hit 130 (my low target temp - top shelf tri-tip ended up higher) while my S1 had barely broke 190.  Total time about 1hr 30min.  Is this normal? I'll be doing a reverse sear after resting so no results yet, just surprised it went so fast.

    Craftsman Cabinet & #1

Our patio was finally remodeled, so I decided to give my #1 a home. A craftsman cabinet and a #5d cover to keep it clean...

New to me used Model 1

Got a good deal on a well kept model 1. Preseasoned bonus! While I have owned a cheap offset, I really used it for grilling.  LazyQ speaks to me so now I'm ready to put in the "effort" Picked up a brisket from Costco, $2.14/lb after coupon. Spent a little extra and went with a Smoke...
