    Summer Turkey

    I have thawed a 12.84lb turkey and started smoking it @ 9:50 this AM Using just over 4oz of pecan and set PID for 275 until IT of 163 is reached.     1st smoke using Auber #2 probe(meat) on Model-2 smoking 5.5 lb chicken, brined 4 hrs, and stuffed with mirepoix. 2 oz cherry(Smokin’ Hot Chips and Chunks), using the attached Auber settings. 225 for 2 hours 225 until 140 IT 350 until 160 IT After 2:15 the IT is 133 which seems slow to me...

    Model 2 Heat Element

    Most of us have a 700w element in our model #2. Steve now offers a 800w element and I'm thinking that it would be useful to attain smoking temps faster and possible be more efficient with or without the Auber. Any thoughts? Has anyone already done the upgrade?
