1st smoke using Auber #2 probe(meat) on Model-2 smoking 5.5 lb chicken, brined 4 hrs, and stuffed with mirepoix. 2 oz cherry(Smokin’ Hot Chips and Chunks), using the attached Auber settings.

After 2:15 the IT is 133 which seems slow to me...
