I'd try some at a week, Bob; it'll be really good. The stuff that goes 2-3 weeks will be great, but so will the week-old stuff. Just needs a little time to settle down and let that smoke flavor penetrate. No way I'd wait 3 weeks before sampling!

I usually wait for two weeks before sampling, but it hits a big threshold of goodness at 4 weeks.

Smokin-It #3 (purchased in 2014) that replaced a Masterbuilt XL (ugh) and a 10+ Year-Old Big Chief (still used for fish), and few others over the years, along with variety of Weber Gas/Charcoal Grills, Anova Sous Vide, etc. devices.

We're past the 3 weeks mark now
Oh my god! taste is awesome! found out the pepper jack with a piece of jerky and a cold adult beverage make a heck of a good snack!
