We tried the seasoning recipe on some ribeyes, and it was good. Just a tad on the salty side, due to the coarser-grain sea salt I used. Next time, I plan to use kosher salt, and up the pepper & garlic a bit. This will be a great taste! Red oak coming this week, so all the ingredients are coming together for a great Santa Maria BBQ night!
I will smoke the tri-tip roasts in the SI, then finish on the grill. Low & slow, reverse sear. I would rather be cooking them over a hot red oak-fired Argentine grill, but I don't have one.
I'd love one, but I just wouldn't use it enough to justify it. I think my alternate plan will be close enough!
