Greg, I didn't like it all, sorry.

I LOVED IT!!!! Like doesn't come close to how much I LOVE that stuff :) It was just what I was looking for. I am actually freezing a quart of it to take to a buddy in New Orleans when I see him Thursday. He saw the pictures of the pies I made with it and loved the way it looked. I will be making more of this again, that's for damn sure! Thanks for posting this recipe. It will be my go to from now on. I have a few others that I like but this was a nice change of pace. Glad I have it in the recipe vault for sure :)

I am resurrecting this topic yet again. The first time I made this sauce was with a big can of San Marzano tomatoes that I had in the pantry from one of my Restaurant Depot runs and it was excellent. The last time I made the sauce it was using Cento from Wal Mart. It was not nearly as good. I haven't been to RD in ages so I am using the same tomatoes that Greg used in the recipe listed. Nina from Costco. I hope I can reproduce the magic from the first batch!

Greg, I tried out your sauce recipe. My nina's didn't come with any basil. I bought some off of Amazon. I got the whole "organic" tomatoes not in puree. So, I'm sure that made a difference in taste??

I have never seen the Organic at our store, so not sure on taste difference.

I'll answer this question, even though it's been a long time since asked, lol. You take the whole tomatoes and crush them through a sifter and let drain as Greg instructs in his recipe. Once you get all of the pulp and juice separated, you then mix them back in to a ratio that you want your sauce to be (thin or thick) and add spices and let chill for the flavors to marry. I will be making some soon as I just had another pizza oven delivered. It's on the porch as I type this, talk about timing! :P

Also while I most of the time make my sauce I have found two excellent sauces that I now use for my pizza and my pasta.

The first and my favorite is Botticellie - Marinara Premium Pasta Sauce (made in Italy). Ingredients are Italian Tomatoes, EVO, Sunflower Oil, Onions, Garlic, Basil, Sea Salt and Black Pepper. Cost is around $5.00 for 24 oz.

Also really good is Raos Marinara Sauce - Rao’s Homemade Marinara Sauce features a proprietary blend of sweet, imported Italian tomatoes, extra virgin olive oil, onions, basil, garlic, black pepper, salt, and oregano. Each 32 oz. jar uses only the freshest ingredients that are free from preservatives and additives. The sauce is a bit thinner, but still tastes great. Cost is around $8.00 for 32 oz.
