Anyone have a list of quickies, when you want to smoke something, but don't have 6 hours or more?
Chicken wings legs and thighs, fatties, pork chops, bratwurst? Any other ideas?

Brian's idea is a good one - spatchcocked chickens cook pretty quick. I also like pork loins (or even tenderloins) for a fast smoke. I brine mine, but if you don't have prep time to brine them, they still turn out great with just a mustard slather & dry rub, in the smoker @ 225 with about 3 oz of cherry, hickory, oak or whatever you like. A 4-5 lb loin takes about 3 1/2 hours to get to 155.

I have smoked pork tenderloin with just the mustard and dry rub method and they were very quick and turned out great.

My quick trick to impress guests when time is short, thick cut bone in pork chops, one hour smoke and finish on the grill, always a big hit.

Yeah, Jim! You can brine them for a couple of hours and they're fantastic! But, they're great right out of the package, too. Always a good quickie!

Love thick cut pork chops eager to try them when we get our Model 1 cranked up. I have gotten to the point where I often order them out at places where I always used to go to a steak... just love to see how different places/people cook them!
