Good morning! Great venison roast smoke yesterday.
Marinaded overnight in a lemon and herb marinade. 225 for only one hour, small roast straight from the fridge, internal temp of 135, hickory chunk and cherry chips. Thought there was something wrong with my probe based on how quickly it hit 135. Checked with another probe and it was done.
It was outstanding!

Seriously though, glad you had a good smoke. There are sever posts about how to get your pictures posted if you are having trouble.

Hey Brian, quick learner. Added my signature, will take pictures of St. Louis Style ribs tonight, going with peanut butter and roasted raspberry chipolte sauce finish.
