Smoke and Dehydrate Cayenne Peppers

I have several gallon bags of cayennes in my freezer from last year. I'd like to smoke and dehydrate them in my 2D all in one go.

How low can the 2D go and still generate smoke? Would chips be better than a chunk? I'm still deciding on the wood I want to use.

One idea is to program it to run at one temp to smoke, then ramp it down to dehydrate. My other thought was to throw in some wood, set it to 140F-150F, and let it run until they're dehydrated.

Do a test run with just chips and measure the length of smoke vs. chunk. Make sure you weigh the chips and chunks to get the same weight. Then go from there. Whether you dehydrate then smoke or smoke then dehydrate I have no knowledge of which way to go. Good luck!

A test run with chips is a good idea. I would think smoking first would be ideal because the chilis would be more moist. Thanks for the good luck.
